Chef Bab's Sizzling Sisig was one of the food businesses that featured an amazing booth design! The presentation of the food entry was neat and elegant! If you happened to pass by the booth, you wouldn't help but check out this beauty - the Dinakdakan!

What is Dinakdakan?

Dinakdakan is an Ilocano way of Sisig, grilled pig head cut in small cubes. The preparation is similar to pork Kinilaw with addition o mayonaise.

The pork Dinakdakan offers the goodness found in an ordinary sisig but magnificently reconstructed to be tastier, more tender and creamier. I found the last characteristic unique and very interesting!

Up close: Sisig the Ilocos Way - Dinakdakan!

This Dinakdakan was not your ordinary sisig! It was more than a food! This was my initial reaction when I had my first bite. However, since I was eating it on its own (i.e. without rice), I experienced an escalating diminishing marginal utility or happiness out of my Dinakdakan. With that, I realized that it is perfect to be paired up with rice. Chef Bab claims this to be an ideal pulutan!

You should definitely give this a try! In fact, I also consider this a close contender for the Expert's Choice award which was actually won by Black Mamba by B.Wings.
