Experience Authentic Spanish-Italian in La Collina
Tucked within the streets of Poblacion, La Collina restaurant stands to bring comfort with its Spanish-Italian cuisine. With its modern yet homey interior, your dining experience will have this elevated feel.
Hiding along the intersecting Molina and Quintos streets of Poblacion, La Collina stuns with its sleek architecture. It may initially miss the eye with the lack of any prominent signs or logos, but once you discover the place, you'll be captivated by its simplistic elegance.
When you walk inside, you'll feel like you are touring a house. The odd simplicity may leave you confused at first but that's because La Collina's beauty is further revealed upstairs, where we were luckily seated.
The menu is considerably lean which makes it easy to browse through and make a selection. For this particular dining experience, we only got to try two dishes. I'll be updating this as soon as I get to try more. For now, let's settle with one pasta dish and one main dish.
The Spaghetti Carbonara (P325) caught me off guard with its authentic sauce (i.e. use of egg yolks for the sauce) giving it this light and airy texture. However, for someone who is used to cream-based version albeit unauthentic, the pasta came in bland. Interestingly, the flavor grew on me as I got succeeding forkfuls.
The Stewed Chicken Catalan (P450) had this zesty tomato-based sauce that was pulpy giving the chicken a richer texture. Tastewise, it was great, but I felt like it was not the go-to dish here in La Collina. Also, it's a little bit expensive for a chicken dish.

Overall, my La Collina experience didn't disappoint yet didn't impress either. However, the ambiance is definitely noteworthy making it a great candidate for dates or even family celebrations. Service was also remarkably friendly and hands-on. However, it was just the dishes and perhaps even the pricing that neutralizes the experience. Anyway, I'm keeping my hopes high up as I discover more dishes here in La Collina. Any dishes to suggest for my next visit? Please do drop a comment.
To the person I was with. I owe you an apology. What I did was not right. I hope you'll eventually forgive me. Thank you for the time and the stories. Wishing you all the best this 2020!
