Tex-mex is a tricky dish, especially for us Filipinos who have a different set of sensory buds. 

The true Tex-Mex has a strong herby-sour-spicy combination, which at its front may not necessarily appeal to us in a general sense. This why it's difficult to strike a balance between authenticity and catering to the Filipino buds. Now, this is where Encima Roofdeck Restaurant comes in.

Encima is a Tex-Mex inspired restaurant located at the roof deck of City Garden Hotel in Poblacion, Makati (not to be confused with City Garden Grand Hotel, though affiliated and stands right across). Encima is headed by chefs that sought out different restaurants, recipes and techniques just to arrive at dishes that strike a gentle balance of authentic Tex-Mex fit for our buds.

Encima's placement in the roofdeck gives it a more open feel, slightly tempered by the limited floor area. Still, a good venue to just chill through the night as the cool breeze gently eases out stress. Honesty is compelling me to confess that I adored Firefly Roofdeck (read more) of City Garden Grand Hotel more. However, Encima has its own nifty charm, especially when it comes to the dishes.

Encima is beginning to carve a name for itself

The Tex-Mex dishes served here in Encima were all carefully selected, modified and enhanced to appeal to Filipino taste buds yet retain a certain degree of authenticity in terms of the overall experience. This explains why despite being fairly new to the food scene, Encima is beginning to carve a name for itself. Now, as it celebrates 2 successful years, Encima launched a promo called “Everything Bottomless”, where you can taste its Tex-Mex bestsellers in an eat-all-you-can fashion.

For only P650, you will be entitled to any of the 15 Tex-Mex dishes and 2 cocktail drinks. Best of all, you can order them as many times as you like, for as long as you can consume them of course.  To further celebrate the event, P650 is already all-in. They are waiving the service charge for this promo to keep it very sulit at this price, but of course if the servers did an excellent job, it would still be nice to show some appreciation.
