Rambla's Fine Spanish Cuisine in Rockwell, Makati

In attempt of exploring something new in Makati, we decided to go a little far from the business district and go to Rockwell which we may roughly call as the "upper east side", given the high-end luxurious living there. Even with this expanded option, it still took us moments of deliberation before we finally agreed to check out Rambla.

Sophisticated yet homey cuisine
Rambla is fueled by the passion of sharing the heritage of Spanish cooking while still giving room for creativity and innovation. Although the dishes here in Rambla are sophisticated and modern, they still have this homey feel allowing you to just appreciate the comfort of the flavors offered.

To build further on the concept of "prime" Spanish cuisine, the interior of Rambla exudes an air of friendly elegance and extroversion which makes it a great place for either an intimate date or a warm barkada reunion. Needless to say, you won't be able to help but bring out your passions (or even gossips) while you enjoy great food and fancy drinks.

The Gambas Al Ajillo & Shiitake Mushrooms (P525) was remarkable with how firm and fresh the prawns were -- a great indication of supreme quality, although a bit pricey for the serving size

The Lechon & Grape Jam Empanada (P375) had a crisp interior and a meaty savory core. The inclusion of the grape jam added subtlety to the meaty treat

The Foie Gras and Pineapple Jam Empanadas (P350) was excellent with the similarly crisp exterior and gooey dreamy core. It was also very tasty with a sweet overall to spark the buds

The Beef Tenderloin Topped with Foie and Caramelized Apples (P850) was a blissful treat for steak lovers (although "bitin"). The excellence in tenderness produced a marbly sensation accented by the ever-flavorful foie gras

The Chipirones (P250) fell a little short int terms of magic (as the taste was highly predictable), although the craft done in preparing the dish was commendable

The Esparrecada (P595) had this organized chaos of sweet, tangy, salty and savory flavors. It was halfway like a "meatball" but delish! We got a little confused with it, but it was a good kind of confused

The Paella de Cochinillo (P995) was extremely tasty with its mix of "fatty" essence and subtle herby taste. It was very new for our palate and it was overwhelmingly crazy

The Paella Negra with Squid & Salmon (P750) featured a sharp seafood goodness which was edgy when it comes to its saltiness. The boldness of sharpness of flavors may at times be too distracting

The dessert selection also shared the same level of appeal as to how they were plated, but we think that something more can be done to retain the same "magic" we experienced with the savory dishes. If not for the Coulant, our dining experience could have ended a little flat.

The Cheesecake with Caramelized Pastry Cream (P245) had a pleasing appearing allowing to influence the taste. It was however considerably plain with straightforward taste

The Churroreo with Vanilla Ice Cream & Caramel (P275) was strolling along the borderline with its confusing textures which caused distortions in the balance of the taste

The Coulant with Pistachios & Matcha Ice Cream (P345) was the star of all the desserts we had. It just had this rich chocolate goodness that matched with the smoothness and softness of the pasty

Rambla has an impressive line-up of dishes. Each is carefully crafted by the chefs. Expect work of art in every plate as you get pampered by the warmth of their service. Prices will most likely sting the wallet, but every peso might be worth it here in Rambla.
